The Prophet ((صلى الله عليه وآله وسلم)) did fight several wars, this is recorded in our own books as well. Of course there were reasons for these wars and there were ethics and a code of conduct.

Modern day jihadists don't draw inspiration from the Prophet ((صلى الله عليه وآله وسلم)). They are more inspired by the likes of Ibn al Jarrah, Khalid ibn Walid and later Salahuddeen, among others.

You are correct that there are fabrications about the Prophet ((صلى الله عليه وآله وسلم)) in Sunni books but these tend to be less about warmongering and more about making the Prophet look like a simpleton (naudhubillah) while trying to portray certain companions as being pioneers.
