^ Salad without dressing is good. After gaining weight with all my children, I ate my salad plain for two years, but now that I am back to what I weighed when my husband and I married, I can afford to add back some calories. :)

Yesterday I improvised a dressing with olive oil, sweet pickle juice, salt, pepper, and grated parmesan cheese. It wasn't half bad.

Usually I just do oil and vinegar or lemon or lime, or use store bought Italian.

My easy salad dressing is to buy Mayonnaise or Miracle Whip and add things to it: vinegar or lemon juice, black pepper, garlic or garlic powder, spices, herbs, etc.

I don't like the bottled salad dressing. Salad should be the last surviving "food" that is almost natural and  actually refreshing. I'd hate to ruin it with product that contains high fructose corn syrup!

You can try the Yogurt dressing, it can be made in various ways

I usually eat salad plain or with lemon juice and a dash of salt and pepper. I tried (bottled) dressing as a child and it tasted so awful and that put me off dressing. Recently though, my mother-in-law came to stay with us for a few days and I tried a couple of her recipes for dressing. They were both quite good.

** As my mother-in-law doesn't measure, the amounts are my approximation of the amounts she added based on watching.

Cucumber Yoghurt Dressing with Mint

- 1 cup cucumber, chopped finely and seeded part removed

- 2 Tbsp lemon juice

- About 3/4 cup thick yoghurt (full fat Greek yoghurt works nicely)

- 2 Tbsp fresh mint, chopped finely (dried mint works as well if you don't have fresh mint on hand)

- 1 clove garlic, chopped finely

- 1 tsp scallions, chopped finely

- Salt and pepper according to taste

Blend the cucumber, lemon juice, and yoghurt together until smooth.

Add the chopped mint, salt, and pepper and pulse to mix it a bit.

Add the garlic and scallions and adjust the salt and pepper to taste.

Avocado Yoghurt Dressing

- 1 avocado

- About 1/2 of a shallot, chopped finely

- About 1/2 cup thick yoghurt

- 1 Tbsp honey

- 1 Tbsp apple cider vinegar

- Juice of 1 lime

- Salt and pepper according to taste

Combine all of the above in a blender and blend until smooth.
