Salaam Fellow Members. :rolleyes:

I read somewhere in a Hadith of Imam Ali (as):
Do not indulge in meat as such that your bellies become graves for animals.
ie do not live only on meat, eat vegetables and pulses aswell - have a variety of foods in your diet.

What are your top 3 favourite vegetarian dishes? Do you have a non-meat or only-veg day in the week? Normally on Thursdays we have vegetarian food only, just to give the meat a break and to appreciate the other bounties of Allah.

Vegetarian meals are wholesome foods and if combined and prepared well can be very tasty. Some simple recipes would be nice to share with fellow members.

I like batata wada....its a veg dish try it :D




Mumbai’s popular fast food snack, Batata Vada, is a deep fried indulgence. Spiced mashed potatoes are dipped in chickpea batter, deep fried to a golden shade and served with mint-coriander chutney or garlic chutney. When Batata Vada is sandwiched between green chutney smeared pav, it becomes a Vada Pav, another of Mumbai’s famous street food snack.

There are quite a few variations to prepare the potato stuffing. I like to season with spices, saute onions and ginger garlic paste before combining with mashed potatoes.


Batata Vada Recipe

Prep & Cooking: 45 mts

Serves 6-8 persons

Ingredients:


2 large potatoes, lightly mashed

1/4 tsp cumin seeds

1/2 tsp mustard seeds

few curry leaves

1 onion, finely chopped

2 green chillis, finely chopped

1/2 tsp ginger garlic paste

1/4 tsp turmeric pwd

1 tbsp lemon juice

fresh coriander leaves for garnish

salt to taste

1/2 tbsp oil

For batter:

1 cup besan/chickpea flour/senaga pindi

2 tbsps rice flour

salt to taste

1/2 tsp red chilli pwd

pinch of cooking soda

water as required




1 Heat oil in a vessel, add the mustard seed and allow them to splutter. Add the cumin seeds and let them brown lightly. Add green chillis, curry leaves and ginger-garlic paste and saute for a mt. Immediately add the onions and saute for 3 mts.
2 Add the salt, turmeric pwd and combine. Add the mashed potatoes and combine and cook for a mt. Add coriander leaves and lemon juice and turn off heat. Cool and make small balls and keep aside.
3 Place a heavy bottomed vessel on the stove, add enough oil for deep-frying and allow it to heat on low flame. While the oil is heating prepare the batter.
4 In a bowl, add the ingredients required for making the batter. Slowly add water and make a slightly thick, flowing batter. Dip the potato ball in the batter and coat it well and place in the hot oil. Cook on medium high flame till golden brown. Remove onto absorbent paper.
5 Serve hot with chutney or tomato sauce and a cup of masala chai OR proceed to prepare Vada Pav.

Salam alaikum,

I prefer vegetarian food and seldom eat meat.  One of my favorites is Broccoli Cheese Potatoes.

Bake as many potatoes as you like depending on how many people you are feeding.  Near the end of your baking time steam a bunch of broccoli until you can chop it easily.  Make a cheese sauce by melting a couple tablespoons of butter, adding a couple of tablespoons of flour and then gradually adding a couple of cups of milk until the flour is mixed in well and smooth.  Grate a block of sharp cheddar cheese into the sauce and add your broccoli.  Once it's all melted and well blended you can pour over the baked potatoes.  Serve with some sourdough bread and a nice tossed salad and there's your meal.

Salam alaikum,

My mother likes when I make Iranian Kuku Sabzi for her.  Chop a bunch of parsley, a couple bunches of green onions, and a package of baby spinach in a food processor or by hand whichever you prefer, depending on the time you have and the consistency you want.  You can also add small amounts of other herbs or greens, such as dill or lettuce, but usually I just do the first three ingredients.  Mix with at least 6 eggs, about 1/4 cup of flour and salt and pepper to taste.  Drop by large spoonfuls into hot oil and fry until well browned on both sides.  You can serve with rice and have yogurt with it as well, or you can put the kuku in sub sandwich type bread with dill pickles, onions, and other sandwich fixings.

Errrrrr oh yeh wait.. you're khoja.. meat is too expensive for you .. so you just buy eggs.. eat em.and assure yourself that you just had meat..

Egg is certainly an animal product, but it does not yet contain the muscles and tissues that we think of as meat.  Vegans would not eat it, but many vegetarians do.

Right you are Sis, eggs are like the equivalent of a womans monthly cycle ie unfertilised eggs. The fertilised ones make the chicks thus is the meat which the farmers dont remove so allow to be hatched into baby chicks. A healthy hen will periodically produce eggy eggs without any need of a cockeral respectively. So its not like as I used to think when I was small that eating eggs is like killing unborn chick otherwise most vegetarians wouldnt eat them. Vegans - the extreme it depends some do and some dont.

Anyway on the subject of eggs.... many veg foods and ready meals have eggs in them such as cheese flan but they tend to specify for the vegans sake.
