Im actually outta cooking ideas...any recipies?

asalaamu alaikum

nkay sistahs and brothers...i need some new, fresh, cheap, easy to make, yummy, filling, random recipies

okay, currently i have in myu kitchen

beef hotdogs and garlic sujuk sausage
rice, egg noodles and pita
dried fuul, dried red lentils and dried chickpeas
along with random spices...and a few lone tomatoes and onions

yup thats about it...oh yeah and eggs n yogurt!

okay soooooooo...any ideas?
ive pretty much exhausted everything fairly obvious.

btw how da heck do i cook dried fuul and chickpeas? PLS!!!!!!!!! I NEEEEEEED TO KNOW!!! (i tried with both and i got so mad cuz i boiled em for like 6 hrs and they didnt get soft!!!)
my husband thinks im insane...ive been feeding him Slovak fried noodles and sujuk for the past 3 days and hes starting to rebell
hes not really fond of da old world e euro foods (which i do inflict upon him anyway) but is there anything ya'llz know of thats more in line with his iranian tastebuds?  before i whip out da mac n cheese n tuna fish dinner kit *yum*

loool, irani food... yum!

my parents are on vacation in iran (wil be gone for 1 month)...

alone with my sis.... and she can't cook anything irani(she can... but it aint as good as my mom makes *sniff*, and i don't like western food :( ).... grrrr!@  :cry:  MOMMY WHERE ARE YOU?! (poor husband of yours :P)

I can only make: kabab, rice, pancakes, eggs, pizza, and some other stuff. :(

If your husband likes, or rather if he stand Pakistani food, go to a desi-store near you and pick up a box of Shan Masala.  Seekh kabab, biryani, kofta kabab, tikka, haleem, nihari...if it weren't for Shan Masalan half of desis living overseas would starve to death.

PS: About the fuul and chick peas.  You have to soak them for a day  or so, then cook them.  I usually put them to soak in the evening and then cook them the next day.  If you don't soak them, they take forever to cook.

Hmm could you have made adas polo and shirazi salad? its light.. but its good for dinner. Man I still cant get over your posts. Talk about 180 degree turn. Girrrl you be nesting

I wonder if rosa (iraini cook book irani women follow relgiously) is online. I dont think it is. If we had another copy Id send you ours. But as it is.. i think a few people would kill me if i did that. Its what I use.

I hope he isnt the type that thinks that macaroni isnt a meal either. And it has to be served with rice otherwise its not a meal. Its then when it gets time to pull out the french bread stick and let him have a taste of that. but alas.. those days are behind you! rofl

Meat and rice with yoghurt(if you don't have dill, throw anything that looks green like grass in the rice)

Fish and rice (hold the yoghurt unless you want him spotty)

Chicken and rice (bring back the yoghurt)

Eggplant

Yeah, "yummy irfani thingies" are quite a pain in the butt. (Try to think about it before you start abusing me. It's all in good humour.)

and yeah Rafffy dear...yesterday i made like this thing with noodles in it and he still wanted phreakin bread....man, no wonder his family has such a high previlence of  diabetes...maybe tonight i'll get all sinister and hide da sugar...man he'll die!!!

hmmmmmmmmmmmm,  hmmmmmmmm well, im training him to like rice cooker basmati...LOL  thou he still whines that it doesnt have any oil or salt in it...and hence slathers on enough of each to give any normal human being (read-non-irani) a decent heart attack

Salaam alaikum

PERSIAN NOODLE SOUP

3       lg           Onions, peeled and thinly
                         -sliced
    3       T            Oil
    2       t            Salt
      1/2   t            Freshly ground black pepper
    1       t            Turmeric
   10       c            Water
      1/4   c            Dried red kidney beans,
                         -washed and soaked in cold
                         -water for 2 hours and
                         -drained
      1/4   c            Dried navy beans
      1/4   c            Dried chickpeas
      1/2   c            Lentils
      1/2   c            Beef broth, preferably
                         -homemade
      1/2   c            Coarsely chopped fresh
                         -chives or scallions
      1/2   c            Chopped fresh dill
      1/2   c            Coarsely chopped fresh
                         -parsley
    6       c            Spinach, washed and chopped
                         -OR
    3       c            Frozen spinach, chopped
    1                    Fresh beet, peeled and diced
                         -in 1/2" pieces
      1/2   lb           Persian noodles (reshteh)
                         -OR
      1/2   lb           Linguine noodles
    1       T            All-purpose flour
    1       c            Liquid whey (kashk)
                         -OR
      1/4   c            Wine vinegar

   Brown the onions in 3 tablespoons oil in a large pot. Add 2 teaspoons
   salt, 1/4 teaspoon pepper, and 1/2 teaspoon turmeric. Pour in 10 cups
   water and add kidney beans, navy beans and chickpeas; bring to boil,
   skim the froth as it forms, reduce heat, cover and simmer for 45
   minutes over medium heat.
  
   Add lentils and beef broth. Cook 55 minutes longer.
  
   Add chopped chives or scallions, dill, parsley, spinach and beet.
   Continue cooking, stirring from time to time, for 1-1/2 hours or
   until the beans are tender. Correct seasoning and add water if the
   soup is too thick.
  
   Add noodles and flour and cook about 10 minutes, stirring
   occasionally. Stir in the liquid whey (or vinegar) and mix well.
  
   Pour the soup into a tureen and serve.

Salaam alikum


STUFFED GRAPE LEAVES  

2       tb           Olive oil
    1       md           Onion -- finely chopped
    5       c            Chopped mushrooms
    1       tb           Dried parsley -- or to taste
      1/4   ts           Black pepper -- or to taste
      1/8   ts           Cayenne -- or to taste
      1/4   ts           Turmeric -- or to taste
    1       c            Cooked yellow split peas
    2       c            Cooked white rice
   16       oz           Jar grape leaves
    1       c            Water

   In a skillet, heat oil and saut  onion and mushrooms
   until soft. Add parsley and spices.  Transfer to a
   bowl. Mix in peas and rice.
  
   Preheat oven to 350 .  Line a 3-qt baking dish with a
   few grape leaves to keep stuffed leaves from sticking
   and burning. Place 1 heaping Tbs of rice mixture (
   depending on size of leaf) in the center of a grape
   leaf. Fold in sides, then roll leaf from stem to tip.
   Place in casserole. Repeat procedure with remaining
   grape leaves until rice mixture is used up. Pour water
   in bottom of dish (to provent sticking and drying
   out). Bake for 25 minutes.  Serves 12 as an appetizer,
   6 as an entr e.

Salaam alaikum

Black Bean and corn salad ^_^

2 handfuls of black beans, cleaned, soaked and cooked for 8 hours
1 bag frozen corn
1 medium onion
1 red bell pepper
5 cloves garlic
1/4 c. fresh cilantro
1/4 t. salt
juice of one lemon, one lime, one orange

Roast pepper and garlic in a 350 oven for about 30 minutes, place
pepper in paper bag for 20 mintes to steam.  Peel pepper and
squeeze meat out of garlic cloves.  Mix *drained* beans, cooked
corn, chopped onion, cut up pepper (I use scissors to cut my
pepper and my cilantro), chopped roasted garlic, cut up cilantro.

Add salt to taste and the juices.  Let sit overnight.



Chickpea salad B)

1 cup dry chick peas, cooked (about 2 1/2 cups)
3-4 green onions with tops, sliced
1 large carrot, grated or cut in fine matchsticks
3/4 cup minced fresh parsley
1 TBS nonfat yogurt (optional, I skip it)
2 TBS unpasteurized cider vinegar
1/4 tsp dried basil (or 1 rounded TBS fresh, minced)

Stir together yogurt, vinegar and basil. Combine with remaining
ingredients, and chill several hours before serving. Goes well with dark
green things, like spinach soup, or broccoli and noodles. Or, stuff into a
pita bread lined with spinach leaves.

Salaam alaikum

Garbonzo ben and rice salad

2 cups drained garbanzos
2 cups cooked brown rice
2 cups diced grn. peppers
2 med. tomatoes, coarsely diced
1/2 cup red onion, diced
4 Tbs. wine vinegar (obviously use just regular vinegar)
1/2 tsp. dillweed
salt and pepper, optional

Combine all ingredients.  Toss well and refrigerate overnight.  Toss several
times during refrigeration period and just before serving.



Spiced Basmati Rice

2 c  basmati rice                      1/2 ts garam masala
       3 tb vegetable oil                       1 ts salt
       1 ea Small onion finely chopped      2 2/3 c  chicken stock
     1/2 ts finely minced garlic          
  
   Pick over the rice an put in a bowl.   Wash in several changes of water.
   Drain.   Pour  fresh  water over the rice and let it soak for 1/2  hour.
   Drain in sieve for 20 minutes.
   Heat  the oil in a heavy-bottomed saucepan over a  medium  flame.   When
   hot,  put in the onion.  Stir and fry until the onion bits have browned.
   Add the rice,  green chili,  garlic, garam masala and salt.  Stir gently
   for  3  to 4 minutes until all the grains are coated with oil.   If  the
   rice begins to stick to the bottom of the pan,  turn down the heat.  Now
   pour  in  the stock and bring the rice to a boil.   Cover  with  a  very
   tight-fitting  lid,  turn heat to very,  very low and cook for 15 to  20
   minutes.

Salaam alaikum

About the chickpeas.  Usually any dried bean you soak overnight however if your in a hurry you can bring them up to a boil in some water let them boil for about 2-3 mins then turn off heat and let them set for about an hour or so. Then cook as usual. Inshallah that helps.

1. blanch the tomatoes in boiling water for 1 min, peel & core

2. cook some rice

3. saute the sausage with some onion

4. mix the rice, sausage/onion, chopped spinach & some feta cheese together

5. drizzle some olive oil & balsamic vinegar into the tomatoes then stuff with the mix

6. bake at 375 for 30 min.

You sould always saute the sausage and onions. Cook some eggs to go with and eat the whole thing with pita bread.

Sorry, but these sausage recipes make me sick. :sick:  (Allah ya'3z an- na3ma)

You gotta learn how to make rice sis. What's happened to that tahdeek or waria you were so famous for? You have to put oil in the rice or it sticks to the bottom of the pan! If you eat rice that isn't dumped, you will be eating lots of starch and you both will be FAT!

Seriously sis, you need to learn how to make kufta (you can put parsley or dill, onions and black pepper). Make it into patties and fry or bake it, or even bbq it.

You need to know how to make meat saloona... there are several different ways.

Then the meat or chicken (pulao/pollo) that is cooked in with the rice (can have dill or broad beans in it too)

Saffron chicken is nice: Marinade chicken in yoghurt, saffron, a pinch of tumeric or mixed spice and serve with white rice.

There is also the rice with dibs ruman or pomegranite in it.  

Man, I am making myself hungry. GOOD THING MY MAID CAME BACK THURSDAY!!!!

Easy meals can be: feta cheese with olives, tomatoes, mint or parsley, cucumbers,(cut up separately),  walnuts and yoghurt with bread.

Eggplant/ground beef: cut eggplant into 1/2 slices. Fry until soft. Put aside on paper towels for oil to drain. Fry ground beef, onions, (garlic if desired) tomatoes and a lil tomato paste. Add some cumin or mixed spice. Arrange eggplant in baking dish. Pour meat mixture over the top. Add 1 cup of tomato sauce. Bake for 20 min.

If all else fails, keep some maheawa (anchovy sauce) handy. Hold your nose and sprinkle it on some bread. Brush it with egg and sprinkle a lil sesame seed on it. Bake it in the oven till it's crispy. Serve with turnip greens and white onion..... and make sure he sleeps on the couch. BELCH!

Salaam alaikum,

Rice is starch, whether or not you boil it and pour the water off, you are still eating starch.  The only thing you are getting rid of is the rest of the vitamins that are  left, after the milling process.  Rice without the added oil is low in fat.   It's the oil and sauces put on rice, that make people fat not the rice.

PS:  Here is a diagram of rice.  See how the inside, the part you eat when you eat white rice is all starch?
